The Only Pasta Salad Recipes You’ll Need This Season

Here’s something I haven’t wanted to admit out loud: I’ve been treating my summer meals like they don’t count. Like they’re just placeholders. Like the real version of my cooking starts when I finally have a fancy outdoor kitchen and a professional grill.

That future kitchen counts. These quick lunches? These lunches usually consist of a $4 bag of plain chips I bought on a whim that never really hits the spot (and they always leave me feeling hungry an hour later, which I keep telling myself I’ll fix by meal prepping, and then don’t), and I’ve kept eating like this because “it’s fine for now.” And somehow “for now” became the whole month of June.

I don’t fully know why I do this. There’s something about having a busy season, trips being planned, kids being home, a packed schedule that makes the kitchen feel like a waiting room. You stop investing. You stop seeing the potential. (You also stop noticing that you’re eating cereal for dinner for the third time this week, apparently.)

And then one day you walk in at 6:14 PM still covered in sunscreen and pool water and realize you’ve been slightly bored with every single meal you’ve eaten lately.
